Hardware Recommendations under 120 + project recommendations

Hi, I’m working as an intern in cybersecurity, planning to build a home lab to add to resume/have something to talk about in interviews and also improve my networking skills. I don’t have too much to spend, I really want to keep it under 120 for now. Any recommendations from Amazon? I don’t have any projects in mind - maybe host AI locally? An SIEM? Any suggestions on fun projects would also be appreciated!
